Carillon Brewing Company is the only brewery in North America attempting to recreate small scale mid-nineteenth century brewing on at a production level. The brewery is not only a living history exhibit but also a federally licensed independent craft brewery and member of the Ohio Craft Brewers Association. Carillon Brewing Co. features a two-story brick brewhouse that is wood fired and gravity fed with primary fermentation occurring in American white oak barrels.

 

Dan Lauro is the Lead Brewer of Carillon Brewing Company and a Living Historian at Carillon Historical Park in Dayton, Ohio. Dan has been with the brewery project since January of 2017 and was a dedicated homebrewer for almost 20 years having learned the hobby from his father. He has likewise been featured or a part of several publications and multimedia projects including an episode of the podcast The Feast. Dan and Kyle co-instruct a Life Long Learning Course on Beer History at the University of Dayton. Dan has an A.S. and A.A. in Electrical Engineering and History respectively from Sinclair Community College, a B.A. in History with a minor in Political Science from Wright State University, and M.A. in History from Wright State University.

David Nilsen is a beer journalist and educator living near Dayton, Ohio. He is a Certified Cicerone, and a member of the National Book Critics Circle and the North American Guild of Beer Writers. His beer and food writing appears in numerous publications and has been awarded by the North American Guild of Beer Writers multiple times. His criticism appears in numerous respected literary journals, and he is honored to serve as the president of the board for his local public library. He lives with his wife, daughter, and very irritable cat.

Kyle Spears is the Head Brewer of Carillon Brewing Company and a Living Historian at Carillon Historical Park in Dayton, Ohio. Kyle has been with the brewery project since its inception and has been featured in numerous publications such as Beer Advocate and Midwest Living. Additionally, he has been featured in several multimedia projects like the 2018 Tastemade video featuring Carillon Brewing Co. . Kyle and Dan co-instruct a Life Long Learning Course on Beer History at the University of Dayton. Kyle received his B.A. in History from Ohio State University.
